Spaghetti with White Clam Sauce

Ive been making a version of this for many years. Recently I added some extra spice (other than the garlic) and I improved the cooling technique. You can’t go wrong with this one!

Ingredients
  1. 3 tablespoons olive oil
  2. 4 cloves garlic, minced
  3. 1/4 cup butter
  4. 1/4 cup white wine
  5. 1 tablespoon dried parsley
  6. 1/4 teaspoon dried oregano
  7. 1/4 teaspoon dried basil
  8. 1/4 teaspoon ground black pepper
  9. 1/4 teaspoon Old Bay seasoning (optional)
  10. 1 large pinch crushed red pepper flakes
  11. 2 (6.5 ounce) cans minced or chopped clams with liquid
  12. 6 - 8 ounces spaghetti or linguine
  13. 1/4 cup diced tomatoes (optional)
  14. 2 tablespoons Parmesan cheese
Instructions
  1. Drain the clams, reserving the liquid of at least one (See notes).
  2. In a saucepan, sauté the garlic until it is nutty brown.
  3. Add the butter, reserved clam liquid, seasonings and wine. Allow the mixture to simmer while you cook the spaghetti. Do not add the clams at this time.
  4. Cook the pasta (in another pot) according to the manufacturer's directions. Do not overcook.
  5. When the pasta is nearly done, add the clams to the sauce.
  6. add the pasta to a serving plate, then top with grated cheese and tomatoes.
Notes
  1. For two people add one additional can of clams and double the pasta.
  2. The canned clams contain more than enough liquid to make the sauce. However, if you use all the liquid, the excess broth is quite tasty and you can serve some crusty bread on the side to "mop" it up.
  3. The clams are not simmered with the sauce to avoid overcooking.
  4. If possible, cooked pasta should not be rinsed. Use tongs to transfer the hot spaghetti directly from the cooking pot to the serving dishes.
