Ingredients
  1. • 2 tablespoons olive oil
  2. • 3 (4 ounce) links sweet or hot Italian sausage
  3. • 2 garlic cloves, minced
  4. • 2 medium tomatoes, diced
  5. • 1 large green or red pepper, cut into 2 inch strips
  6. • 1 medium yellow onion, sliced into thick strips
  7. • 4 ounces mushrooms, sliced
  8. • 1 small can tomato sauce
  9. • 1/2 teaspoon dried basil
  10. • 1/2 teaspoon dried oregano
  11. • 6 ounces (about 2 cups) tube shaped pasta (penne or ziti), uncooked
  12. • Grated Parmesan cheese
Instructions
  1. In a large saucepan, combine the diced tomatoes, canned sauce, basil and oregano.
  2. Bring to a boil then lower the heat to a simmer.
  3. In a frying pan, add the oil and sausage links. Brown well.
  4. Remove the browned links and slice into pieces, about 1/2 inches each.
  5. Return the sliced sausage to the pan and continue browning on all sides.
  6. Add the browned sausage to the simmering sauce.
  7. Add the peppers and onions to the pan and cook until the onions are translucent. add a little more oil if the pan is dry.
  8. Add the minced garlic to the pan and cook another minute.
  9. Add all the vegetables, including the mushrooms, to the simmering sauce.
  10. Continue to simmer for 30 to 45 minutes.
  11. Cook the pasta to manufacturer's directions, then drain.
  12. Serve pasta in bowls, top with generous portions of sausage and sauce and sprinkle with grated cheese.
