Ingredients
  1. • 4 skinless chicken thighs, bone in or bone out (about 1 1/2 pounds)
  2. • salt and pepper or seasoning blend for chicken
  3. • 1 Tbsp. olive oil
  4. • 2 Tbsp. butter
  5. • 8 ounces sliced mushrooms
  6. • 1 clove garlic, minced
  7. • 3 Tbsp. flour
  8. • 1 cup chicken broth
  9. • 1/3 cup dry white wine
  10. • 1/2 cup cream or half and half
  11. • 1 to 2 Tbsp. fresh chopped parsley
Instructions
  1. Wash chicken and pat dry. Sprinkle chicken thighs with seasonings.
  2. In a large skillet, over medium heat, heat the oil and butter.
  3. Add chicken, brown on both sides, turning often. Remove to plate and set aside.
  4. Add the mushrooms to the skillet and cook, stirring often, until mushrooms are tender and brown.
  5. Add the garlic, continue stirring, and cook 1 minute longer.
  6. Stir in flour until blended, then add the chicken broth and wine and stir until blended.
  7. Return the chicken to the skillet, cover, reduce the heat to low, and cook for 20 - 30 minutes, or until chicken is tender.
  8. Stir in the cream and parsley and heat through.
  9. Serve with white rice or egg noodles.
Notes
  1. For variation, substitute different wines, e.g., Marsala
